TORRENT x KUBOTA Sake Pairing Night
An exclusive collaboration event that delighted all five senses unfolded at the hotel's bar. Special guest DJs from fashion and art worlds kept the energy high. Guests from around the globe enjoyed music and five French fusion snacks paired with sake.
The SHIBUYA STREAM HOTEL in the heart of Shibuya is a hot spot that was rebranded in 2024. It welcomes guests from all over the world in an outstandingly attractive location, directly connected to Shibuya Station and overlooking the Shibuya River.
Accompanied by a DJ performance, the casual sake pairing night is hosted at Bar & Dining TORRENT, the trendy bar and neo-bistro located in this cutting-edge hotel.
One highlight was the TORRENT’s original cocktail "SAKE Pirinha," made with KUBOTA SENJYU, combining the refreshing taste of lime with the sweetness of sake, offering a new way to enjoy Japanese sake.
The event featured an eclectic mix of music, centered on 1980s Japanese City Pop, creating a lively atmosphere.
Kicking off the DJ lineup was Takumi Yuge, a fashion designer and art director with extensive experience in Tokyo Collections, CD jacket design, and music video direction. In 2022, he launched a new brand, Adult Oriented Robe, and a concept shop called AOR.
The event was topped off by Nagai Hiroshi. He is a renowned graphic designer/illustrator and a leading figure known for his tropical and transparent landscape illustrations, including Eiichi Otaki's "A Long Vacation" and "Niagara Song Book" album jackets. As well as DJ performances, his artworks were also displayed at the venue.
The event was filled to capacity with positive feedback. Japanese guests commented as follows: "I discovered surprising pairings and new insights." " I always thought sparkling sake wouldn’t measure up to a whisky highball, but KUBOTA SPARKLING was very fragrant, wonderfully lively, and delicious." "I think sake pairings appeal to foreigners and young people! I will definitely recreate it at my next home party!"
Moreover, a Korean guest said, "The sake pairings exceeded expectations, and KUBOTA SPARKLING was stunning." A British guest commented, "Very fun and trendy event to enjoy sake and experience new pairings!" An American guest shared, "I came for Mr. Nagai's art, but the sake and food pairings were excellent, and I stayed until the end. The music, venue, and pairings were superb. Nice work!"
Here is the full story.
1.Salmon and Kiwi Ceviche
The welcome drink, KUBOTA SPARKLING, was paired with a canapé topped with salmon and kiwi ceviche. "The tangy kiwi and the hint of spiciness from the Tabasco perfectly complement the crisp and dry Kubota Sparkling,"said the chef.
2.Scallops, Cream Cheese and Caviar
The chef introduced a unique dish not on the regular menu: scallops with cream cheese, avocado and caviar. "The creamy texture of the cream cheese, avocado, and scallops pairs wonderfully with KUBOTA SENJYU JUNMAI GINJO," he said.
3.Marinated Olives
The bartender's Japanese Sake Pirinha is a refreshing cocktail made with KUBOTA SENJYU, which echoes the natural umami of rice with sourness and a hint of sweetness, and lime. It's an ideal match with TORRENT's homemade olives, featuring anchovy-stuffed red olives and marinated green Kamata olives from Greece.
4.Baked Chicken Thigh in Herbed Bread Crumbs Harissa Flavor
Using as many locally sourced ingredients as possible, this dish features chicken thighs from Fuji Kogen Chicken in Yamanashi Prefecture. The chef explains, "The chicken thighs, marinated in salted rice malt, are coated with a blend of Middle Eastern harissa spice with a herb-infused breadcrumb crust for an exotic touch." The flavors are crafted to complement the rich, umami taste of the Yamahai-style KUBOTA HEKIJYU.
5.Cold Roast Beef
Featuring lean Australian beef, this roast beef is accompanied by a balsamic vinegar sauce that brings out its natural sweetness, along with slices of Parmigiano Reggiano. KUBOTA JUNMAI DAIGINJO complements the delicate sweetness of the combination exceptionally well.
