Ask AI Your Preference of Sake

at Kubota Sake Bar in Shibuya, TOKYO

As of 2023, AI technology allows you to enjoy sake in a more personalized way.
Shibuya Parco’s B1 floor, Chaos Kitchen is worth a visit.
The neo-izakaya, Mirai Sake Bar offers you innovative sake-tasting entertainment “Yummy Sake”.

By blind-tasting 10 different kinds of sake samples, the AI will find your favorite type of sake and suggest the snacks that go with it.
A cocktail or glass of sake that matches your preferences comes at last. The whole experience costs only 2,200 yen.

The fact is that sake is a very friendly drink for everyone. We invited a diverse group of guests to try out Yummy Sake’s AI tasting for understanding their own palates deeply. Most interestingly, they unanimously agreed that Yummy Sakes results reflected their own taste buds.

There was a mix of people who had just moved to Tokyo and those who had lived here for more than 15 years. They have various international backgrounds from Switzerland, France, Bulgaria, New Zealand, Canada, the Philippines, Thailand, Singapore, Taiwan, and many other countries. Their usual drink styles varied from whisky, wine, gin, and flexible drinkers.

The process of Yummy Sake tasting is quite simple. You rate 10 sample sakes by your own intuition on a 5-point scale, like or dislike, and enter it into your own cell phone. The results may surprise you with onomatopoeic sounds such as Awa Awa, Kyun Kyun, Kurun Kurun, Puri Puri, and so on. It sounds eccentric. However, tasting is a sensuous experience. Sake literacy is not required.

If you open the door of curiosity and let your senses flow, your own sake identity will be grown. One guest was surprised as “sake can be fruity. Another remarked, I enjoyed these NEW flavors or STYLES of sake compared to those that I have tried before. I usually dont enjoy sake because it has a very strong taste, but these types of sake I can enjoy.

Sometimes taste brings back pleasant memories. One of the guests commented, “The experience I had today, especially with the SEPPOU Kanzake (warm sake), invokes good memories of drinking a similar one with friends in Tochigi.
